I originally wanted this to be a salad dressing….but since its so thick and I didn’t want to add a crazy amount of oil, I made it into a sauce! It is still quite Delish as a salad dressing I might add if you don’t mind a thicker dressing! I had this with some zucchini noodles and sauteed veggies and bison meatballs!

- 1 cup Sun-dried Tomatoes in olive oil
- 1 handful beet leaves
- 1/4 cup lemon juice
- 1/4cup Grapeseed Oil
- Salt and Pepper to taste
- Place everything in blender and let it go until everything is blended and makes a thick sauce!
